Noble Smoke CLT

When we travel we always are on the lookout for a BBQ spot to try. This time we tried out the Noble Smoke. A bit about Noble Smoke:

For 25 years, Chef Jim Noble chased his dream of making barbecue all over the South, crisscrossing the Carolinas, traveling to Texas twice, and sampling ribs and pork sandwiches everywhere in between. Off the road, he’d get lost in books and cookbooks, reading up on a tradition that is nothing short of personal to pitmasters and diners alike.

The opening of Noble Smoke marks the end of this long journey. It’s a tribute to the legendary pitmasters that made (and sometimes broke) the rules. It’s a heartfelt demonstration of Noble’s longtime love for smoked meats. Most of all, it’s a place to relax Southern-style and enjoy some great barbecue with friends.

Alright enough about Jim already… here is what we had to eat.

Succotash, Street Corn, Hush puppies, Turkey, and Pork Tenderloin with Chimichurri

The food was delicious. The succotash was a perfect blend of fresh, sweet corn and tender beans, with just the right amount of seasoning. The street corn was a standout—grilled to perfection, with smoky charred edges.

The hush puppies were a total crowd-pleaser—crispy on the outside, yet soft and fluffy on the inside, with a slight sweetness that complemented the savory dishes perfectly. As for the turkey, it was juicy and flavorful.

The pork tenderloin with chimichurri was pure perfection. The pork was tender and succulent, seared beautifully to lock in the juices, while the chimichurri sauce added a zesty, herby kick that balanced the richness of the meat.

Bonus – the Wayne Monk tray featuring red slaw and Lexington-style BBQ is named after the famous pitmaster who established Lexington Barbeque in 1962. They also have a Pete Jones tray for those who prefer Eastern NC BBQ.
