Grilled Street Corn

Summer is my favorite time of year. The produce is amazing and we get great corn here in North Carolina. I was looking for different recipes to spice it up a bit while still keeping it healthy. I came across this recipe that feels a bit decadent without all the consequences. I can’t wait to serve this at an upcoming dinner party. This is so easy and really yummy. Grilled Street Corn

Ingredients
  

  • 4 ears Corn on Cob Medium / Cleaned
  • ¼ teaspoon Chili Powder
  • ¼ teaspoon Sea Salt
  • 3 tbsp Cilantro Roughly Chopped
  • 1 cup Greek Yogurt Plain / Fat Free
  • 1 ½ tbsp Lime Juice Fresh
  • ¼ teaspoon Kosher Salt
  • ¼ teaspoon Black Pepper

Instructions
 

  • Preheat grill to medium-high.
  • Mix together yogurt and lime juice in a small bowl; season with salt and pepper and set aside.
  • Grill corn, turning occasionally, until lightly charred in spots and tender, about 10 minutes.
  • Remove corn from grill using tongs; brush yogurt mixture liberally over corn.
  • Season with chili powder and sea salt; garnish with cilantro and serve warm.
