Summer is my favorite time of year. The produce is amazing and we get great corn here in North Carolina. I was looking for different recipes to spice it up a bit while still keeping it healthy. I came across this recipe that feels a bit decadent without all the consequences. I can’t wait to serve this at an upcoming dinner party. This is so easy and really yummy. Grilled Street Corn
Ingredients
- 4 ears Corn on Cob Medium / Cleaned
- ¼ teaspoon Chili Powder
- ¼ teaspoon Sea Salt
- 3 tbsp Cilantro Roughly Chopped
- 1 cup Greek Yogurt Plain / Fat Free
- 1 ½ tbsp Lime Juice Fresh
- ¼ teaspoon Kosher Salt
- ¼ teaspoon Black Pepper
Instructions
- Preheat grill to medium-high.
- Mix together yogurt and lime juice in a small bowl; season with salt and pepper and set aside.
- Grill corn, turning occasionally, until lightly charred in spots and tender, about 10 minutes.
- Remove corn from grill using tongs; brush yogurt mixture liberally over corn.
- Season with chili powder and sea salt; garnish with cilantro and serve warm.
