Chickpea Salad
Ingredients
- 1/3 cup Red Onion (Finely Diced)
- 2 cans Chickpeas (15oz - Drained & Rinsed)
- 3 tablespoons Extra Virgin Olive Oil
- 3 tablespoons Vegetable Oil
- 1 1/2 tablespoon Lemon Juice (Freshly Squeezed)
- 1/3 cup Fresh Parsley (Chopped)
- 1/2 teaspoon Salt
- 1/2 teaspoon Black Pepper (Freshly Ground)
- 1/8 teaspoon Sugar
Directions
Step 1 | |
Place the diced onion in a small bowl and cover with cold water. Let sit for 10 minutes, then drain. This takes the bite out of the onion. | |
Step 2 | |
Combine the onions with the remaining ingredients and toss well. | |
Step 3 | |
Taste and adjust seasoning with more lemon, salt, and pepper, if necessary. | |
Step 4 | |
Cover and refrigerate until ready to serve. | |
Step 5 | |
Toss well before serving and adjust seasoning again, if necessary. | |

Step 6 | |
The salad can be made and stored in a covered container in the refrigerator up to 2 days ahead of time. |
