Looking to lighten up a regular coleslaw dish? This is the perfect non-mayo based slaw recipe. It is light and refreshing with the lime juice. I was looking for something a bit different to serve with our pork ribs and this was the perfect addition and easy. Enjoy.

Carrot Slaw with Pineapple
Ingredients
- 2 pounds Carrots Shredded
- 2 cup Pineapple Cubed
- ? cup Salted Peanuts Chopped
- ¼ cup Lime Juice
- 2 tbsp Canola Oil
- 1 cup Cilantro
- Salt & Pepper To Taste
Instructions
- Toss carrots, pineapple, lime juice, oil, salt, pepper and peanuts together in a bowl.
- Refrigerate for up to 8 hours before serving to let flavors set up.
