Carrot Slaw with Pineapple

Ingredients
  

  • 2 pounds Carrots Shredded
  • 2 cup Pineapple Cubed
  • ? cup Salted Peanuts Chopped
  • ΒΌ cup Lime Juice
  • 2 tbsp Canola Oil
  • 1 cup Cilantro
  • Salt & Pepper To Taste

Instructions
 

  • Toss carrots, pineapple, lime juice, oil, salt, pepper and peanuts together in a bowl.
  • Refrigerate for up to 8 hours before serving to let flavors set up.
