Looking for a healthy recipe for the new year? Try a different type of stir fry. This one will pack a punch. It is full of really great ingredients- spinach, peppers, chickpeas, black beans etc etc. You can pair this recipe with ground turkey or chicken breast and make it a meal.

Lean Bean Stir Fry [Sassool Cafe]
Ingredients
- 2 tbsp Extra Virgin Olive Oil
- 1 Yellow Onion Sliced
- 1 Red Pepper Sliced
- 4 ounces Mushrooms Sliced
- handful Pinenuts
- ½ bunch Cilantro Diced
- 1 teaspoon Chili Powder
- 1 pinch Red Pepper Flakes
- 1 teaspoon Cumin
- 3 cup Spinach Leaves
- ¼ cup Water
- 1 ½ cup Canned Black Beans Rinsed
- 1 ½ cup Cooked Chickpeas
- ½ bunch Parsley
Instructions
- Heat olive oil in a pan and then add sliced onion and red bell pepper and sauté until onion becomes fragrant. Then add in the mushrooms and pinenuts, followed by salt and spices.
- Cook for about 5 minutes and then add the spinach on top of everything along with about ¼ cup water. The spinach will begin to wilt within a minute or two.
- Right when the spinach has started to wilt, add in the thoroughly rinsed black beans and chick peas. Stir a few times to mix all ingredients and then let cook for about 3 minutes.
- Remove from heat and top with diced parsley. Serve while warm.
