Chickpea Salad

I was looking for a healthy side to add to our sandwiches and came across this recipe. It is super easy and really good. If you are looking for something to add as a side check this one out.

Chickpea Salad

Ingredients
  

  • 2 cans Chickpeas 15oz - Drained & Rinsed
  • ? cup Red Onion
  • 3 tbsp Extra Virgin Olive Oil
  • 3 tbsp Vegetable Oil
  • 1 ½ tbsp Lemon Juice
  • 1/3 cup Fresh Parsley Chopped
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1/8 teaspoon Sugar

Instructions
 

  • Place the diced onion in a small bowl and cover with cold water. Let sit for 10 minutes, then drain. This takes the bite out of the onion.
  • Combine the onions with the remaining ingredients and toss well.
  • Taste and adjust seasoning with more lemon, salt, and pepper, if necessary.
