I was looking for a healthy side to add to our sandwiches and came across this recipe. It is super easy and really good. If you are looking for something to add as a side check this one out.

Chickpea Salad
Ingredients
- 2 cans Chickpeas 15oz - Drained & Rinsed
- ? cup Red Onion
- 3 tbsp Extra Virgin Olive Oil
- 3 tbsp Vegetable Oil
- 1 ½ tbsp Lemon Juice
- 1/3 cup Fresh Parsley Chopped
- ½ teaspoon Salt
- ½ teaspoon Black Pepper
- 1/8 teaspoon Sugar
Instructions
- Place the diced onion in a small bowl and cover with cold water. Let sit for 10 minutes, then drain. This takes the bite out of the onion.
- Combine the onions with the remaining ingredients and toss well.
- Taste and adjust seasoning with more lemon, salt, and pepper, if necessary.
