Barley Black Bean Burritos

Are you looking for a easy slow cooker recipe that is really good? This is one of my favorite recipes and very easy. If you want to add a protein, you could easily add some chicken to the dish. Hope you enjoy it! Let me know what you think.

Barley Black Bean Burritos

Ingredients
  

  • 1 cup Uncooked Barley
  • 1 cup Frozen Cup
  • ? cup Water
  • 1 tbsp Fresh Lime Juice
  • 2 teaspoon Mexican Seasoning
  • 2 teaspoon Minced Garlic
  • 1 can Black Beans Rinsed and Drained
  • 1 can Chicken or Veggie Broth
  • 1 can Diced Tomatoes with Green Chili Undrained
  • 12 Tortillas

Instructions
 

  • Place first 9 ingredients into the slow cooker and stir. Cover and cook on low for 6.5 hours.
  • After it is cooked spoon mixture into tortilla. Add your favorite toppings. Suggestions could include salsa, gaucamole, or salsa.
