Barley Black Bean Burritos
Ingredients
- 1 cup Uncooked Barley
- 1 cup Frozen Corn
- 1/3 cup Water
- 1 tablespoon Fresh Lime Juice
- 2 teaspoons Mexican Seasoning
- 2 teaspoons Minced Garlic
- 1 can Black Beans (Rinsed and Drained)
- 1 can Chicken or Veggie Broth
- 1 can Diced Tomatoes with Green Chilies (Undrained)
- 12 Tortillas

Place first 9 ingredients into the slow cooker and stir. Cover and cook on low for 6.5 hours. | |

After it is cooked spoon mixture into tortilla. Add your favorite toppings. Suggestions could include salsa, gaucamole, or salsa. Enjoy! |
