    Barley Black Bean Burritos

    Ingredients

    • 1 cup Uncooked Barley
    • 1 cup Frozen Corn
    • 1/3 cup Water
    • 1 tablespoon Fresh Lime Juice
    • 2 teaspoons Mexican Seasoning
    • 2 teaspoons Minced Garlic
    • 1 can Black Beans (Rinsed and Drained)
    • 1 can Chicken or Veggie Broth
    • 1 can Diced Tomatoes with Green Chilies (Undrained)
    • 12 Tortillas

    Directions

    Step 1
    Place first 9 ingredients into the slow cooker and stir. Cover and cook on low for 6.5 hours.
    Step 2
    After it is cooked spoon mixture into tortilla. Add your favorite toppings. Suggestions could include salsa, gaucamole, or salsa.
