I recently made a roasted red pepper and feta salad. It was delish and very easy. I loved the saltiness from the feta and the sweetness from the red peppers. We are fortunate to live close enough to the Farmer’s Market and I was able to pick up feta from Chapel Hill Creamery. It was very yummy. Hope you enjoy!

Roasted Red Pepper and Feta Salad
Ingredients
- 4 Red, Yellow and/or Orange Peppers
- ¼ cup Olive Oil
- ½ cup Red Onion Chopped
- ¼ cup Parsley Chopped
- ¾ cup Feta Crumbled
Instructions
- Preheat Oven to 375 degrees.
- Wash peppers and place in baking dish. Pour olive oil over the peppers and bake for 35 minutes.
- Remove peppers from the oven and let cool for at least 30 minutes.
- After the peppers have been cooled, remove the peel and discard. Cut the peppers into 1 inch pieces and place in bowl. Add parsley, red onion, feta and toss with the oil that the peppers cooked in.
