Lentil Butternut Squash Soup

I am always looking for easy crock-pot recipes. This one is healthy and delish. It is loaded with lots of great veggies. Did someone say Kale??? I will say it is a bit labor intensive because you have to cut all the veggies, but I think in the end it is worth it.

Lentil Butternut Squash Soup

Ingredients
  

  • 2 cup Butternut Squash Cubed
  • 1 cup Carrots Sliced
  • 2 cup Sweet Potatoes Cubed
  • 1 ½ cup Celery Chopped
  • 1 ½ cup Lentils Rinsed
  • 1 cup Onion Chopped
  • 5 cloves Garlic Minced
  • 1 teaspoon Cumim
  • ¼ teaspoon Black Pepper
  • 1 teaspoon Kosher Salt
  • 2-3 cups Kale Roughly Chopped
  • 1 tbsp White Wine Vinegar

Instructions
 

  • Place everything, except kale and vinegar, in your slow cooker. Cover and cook on low for 6-7 hours.
  • Add in the kale and vinegar. Stir to combine.
  • Serve immediately.
