I am always looking for easy crock-pot recipes. This one is healthy and delish. It is loaded with lots of great veggies. Did someone say Kale??? I will say it is a bit labor intensive because you have to cut all the veggies, but I think in the end it is worth it.
Lentil Butternut Squash Soup
Ingredients
- 2 cup Butternut Squash Cubed
- 1 cup Carrots Sliced
- 2 cup Sweet Potatoes Cubed
- 1 ½ cup Celery Chopped
- 1 ½ cup Lentils Rinsed
- 1 cup Onion Chopped
- 5 cloves Garlic Minced
- 1 teaspoon Cumim
- ¼ teaspoon Black Pepper
- 1 teaspoon Kosher Salt
- 2-3 cups Kale Roughly Chopped
- 1 tbsp White Wine Vinegar
Instructions
- Place everything, except kale and vinegar, in your slow cooker. Cover and cook on low for 6-7 hours.
- Add in the kale and vinegar. Stir to combine.
- Serve immediately.
