I normally pack my lunch and one of the things I toss in is a granola bar. I was looking for something a bit better for a snack then the prepackaged granola bars and came across some no bake energy bites. They are a great substitute. Let me know what you think.
Energy Bites
Ingredients
- 1/2 cup Semisweet Chocolate Chips
- 1/3 cup Honey
- 1 tablespoon Chia Seeds
- 1 teaspoon Vanilla Extract
- 1 cup Dry Oatmeal ((I used old-fashioned oats))
- 2/3 cups Toasted Coconut Flakes
- 1/2 cup Peanut Butter
- 1/2 cup Ground Flax Seed

Stir all ingredients together. Cover and chill in the refrigerator for half an hour. | |

Once chilled, roll into balls of whatever size you would like. Store in an airtight container and keep refrigerated for up to 1 week. |
