    Roasted Red Pepper and Feta Salad

    We tried this recipe as part of a New Year's resolution. We really loved it. I hope you enjoy it as much as we do.

    Ingredients

    • 4 Red, Yellow and/or Orange Peppers
    • 1/4 cup Olive Oil
    • 1/2 cup Red Onion (Chopped)
    • 1/4 cup Parsley (Chopped)
    • 3/4 cups Feta (Crumbled)

    Directions

    Step 1
    Preheat Oven to 375 degrees.
    Step 2
    Wash peppers and place in baking dish. Pour olive oil over the peppers and bake for 35 minutes.
    Step 3
    Remove peppers from the oven and let cool for at least 30 minutes.
    Step 4
    After the peppers have been cooled, remove the peel and discard. Cut the peppers into 1 inch pieces and place in bowl. Add parsley, red onion, feta and toss with the oil that the peppers cooked in.
    Step 5
    Serve and Enjoy!
