Lexington, NC has the most BBQ Restaurants per capita of any city in the world. If you are wondering why it is largely due to Lexington-style BBQ being some of the best you can find anywhere. While it is very difficult to re-create the signature style of the meat the unique side item is very possible to recreate and goes well with anything.
One important pro-tip – if you want to get the right consistency for the cabbage make sure you use a really good food processor like this one. You can always adjust the amount of heat but this is what we use to get that very slight taste that isn’t overpowering and cuts the sweetness of the sugar.
