Quick meals don’t have to be boring or plain. In Disney’s Animal Kingdom there is a great find in the Eight Spoon Café with their baked macaroni & cheese. The menu is simple only there items – regular macaroni & cheese, an option with pulled pork and an option with shrimp and sweet chili sauce. The portions aren’t overwhelming but you aren’t going to want to eat a ton of food in the Florida heat. (Trust me.)
If I were going back I might just do the shrimp version – the sweet/spicy sauce was good and there are plenty of places to get BBQ in the park. Overall this is a great snack or lunch and from what we saw there is no line with plenty of seating nearby.
