Chatting with Pitmaster – Sam Jones #chswff

Last night at the Cross Cultural BBQ event, I was able to chat with a few of the chefs and pitmasters.

Of course we had to chat with Sam Jones of Skylight Inn in Ayden, North Carolina. Sam made a goat for the evening. Since Sam has a very classic traditional approach at his restaurant, I asked him how it was to do something different like this. He said he basically cooked the goat like he would a hog. So he took his traditional approach on a different meat. Normally if he was going to cook a goat he would cook it on a spit but today he smoked the goat. He lightly seasoned the goat with olive oil and salt.

Ever since Anthony met Sam at a Stir the Pot event they joked about him serving red slaw. Red slaw is traditionally served with Lexington style BBQ. Since Anthony is from Winston-Salem, this is his all time favorite type of slaw. Naturally we had to ask Sam again if he had any red slaw and his response was “It would be easier for Billy Graham to announce he wasn’t a Christian then for him to serve red slaw in Ayden, North Carolina.” Point taken – this is not something you would ever do in Eastern style BBQ.

One day, Sam, we will make it to Ayden, and perhaps the slaw smack down will happen. Sam you make an excellent goat, you may want to consider adding it to the menu at the Skylight Inn.
