I’ve made high-octane concoctions before and typically they turn out well. This time we hit another home run combining caffeine, alcohol and everyone’s favorite vegetable bacon. That’s right – Caffeinated Cake Vodka-Infused Candied Bacon (CCVIC Bacon for short) is candied bacon that has both the benefit of caffeine and alcohol to make it the best candied bacon recipe ever. The recipe is simple and while the process takes a little time the finished product is excellent. We used it as a topping for the Krispy Kreme bread pudding with a butter rum sauce. Yes – that is 24 Krispy Kreme Doughnuts, 3 shots of rum and other ingredients.
The candy glaze consists of 1 cup packed light brown sugar, 1.5 oz (one shot) of coffee, 1.5oz (one shot) Pinnacle Cake Flavored Vodka, 1 Tbs Rice Wine Vinegar and ground pepper. Start the bacon in the oven on a cooling rack at 350 for seven minutes each side. Combine all ingredients and then brush them on the bacon alternating sides every five minutes until the glaze is gone or the bacon is completely coated and candied. Let rest until completely cool and then use as a topping, a side or just eat it by itself.
