Looking to lighten up a regular coleslaw dish? This is the perfect non-mayo based slaw recipe. It is light and refreshing with the lime juice. I was looking for something a bit different to serve with our pork ribs and this was the perfect addition and easy. Enjoy.
Carrot Slaw with Pineapple
Ingredients
- 2lb Carrots (Shredded)
- 2 cups Pineapple (Cubed)
- 1/3 cup Salted Peanuts (Chopped)
- 1/4 cup Lime Juice
- 2 tablespoons Canola Oil
- 1 cup Cilantro
- Salt and Pepper (To taste)

Toss carrots, pineapple, lime juice, oil, salt, pepper and peanuts together in a bowl. | |

Refrigerate for up to 8 hours before serving to let flavors set up. |
