While it is very difficult to re-create the signature style of the meat the unique side item is very possible to recreate and goes well with anything.

One important pro-tip – if you want to get the right consistency for the cabbage make sure you use a really good food processor like this one. You can always adjust the amount of heat but this is what we use to get that very slight taste that isn’t overpowering and cuts the sweetness of the sugar.

Lexington-Style Red Slaw


  • 1 Medium Head Cabbage, (Cored and Finely Chopped)
  • 2/3 cups Ketchup
  • 1/2 cup Apple Cider Vinegar
  • 1/2 cup Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Ground Black Pepper
  • 2 teaspoons Hot Sauce (Texas Pete Preferred)


Step 1
Whisk together ketchup, vinegar, sugar, salt, pepper and hot sauce.
Step 2
Pour dressing over finely chopped cabbage and toss until well mixed.
Step 3
Let sit, tossing occasionally, for 20 minutes.
Step 4
Store in an airtight container in refrigerator until ready to serve. For best results make a day ahead.
