Looking to lighten up a regular coleslaw dish? This is the perfect non-mayo based slaw recipe. It is light and refreshing with the lime juice. I was looking for something a bit different to serve with our pork ribs and this was the perfect addition and easy. Enjoy.

Carrot Slaw with Pineapple

Ingredients

  • 2lb Carrots (Shredded)
  • 2 cups Pineapple (Cubed)
  • 1/3 cup Salted Peanuts (Chopped)
  • 1/4 cup Lime Juice
  • 2 tablespoons Canola Oil
  • 1 cup Cilantro
  • Salt and Pepper (To taste)

Directions

Step 1
Toss carrots, pineapple, lime juice, oil, salt, pepper and peanuts together in a bowl.
Step 2
Refrigerate for up to 8 hours before serving to let flavors set up.
