Looking for a healthy recipe for the new year? Try a different type of stir fry. This one will pack a punch. It is full of really great ingredients- spinach, peppers, chickpeas, black beans etc etc. You can pair this recipe with ground turkey or chicken breast and make it a meal.

Lean Bean Stir Fry [Sassool Cafe]

Ingredients

  • 2 tablespoons Extra virgin Olive Oil
  • 1 Yellow Onion (Sliced)
  • 1 Red Pepper (Sliced)
  • 4oz Mushrooms (Sliced)
  • handful Pinenuts
  • 1/2 bunch Cilantro (Diced)
  • 1 teaspoon Chili Powder
  • pinch Red Pepper Flakes
  • 1 teaspoon Cumin
  • 3 cups Spinach Leaves
  • 1/4 cup Water
  • 1 1/2 cup Canned Black Beans (Rinsed)
  • 1 1/2 cup Cooked Chickpeas
  • 1/2 bunch Parsley (Diced)

Directions

Step 1
Heat olive oil in a pan and then add sliced onion and red bell pepper and sauté until onion becomes fragrant. Then add in the mushrooms and pinenuts, followed by salt and spices.
Step 2
Cook for about 5 minutes and then add the spinach on top of everything along with about ¼ cup water. The spinach will begin to wilt within a minute or two.
Step 3
Right when the spinach has started to wilt, add in the thoroughly rinsed black beans and chick peas. Stir a few times to mix all ingredients and then let cook for about 3 minutes.
Step 4
Remove from heat and top with diced parsley. Serve while warm.
