Yogurt with the Piedmont Picnic Project

The Piedmont Picnic Project is focused on the common love of food history and historical food practices. They offer monthly classes so I finally was able to check out the Yogurt class.

I went into the class thinking that yogurt would rather complicated. I found out that it may not be as difficult as I thought to make yogurt. In a nutshell, you take half a gallon of whole milk and heat it to 180 degrees. You then cool it to 115-110 degrees and whisk in your starter. Wrap the pot with a towel, place it in the oven with the light on and let it rest for at least 8 hours. The longer you leave it the tangier it will taste. If you want to add any flavors you do it after the fact.
